BLT's For 12

Tonight, I made BLT's for dinner. In our house, the making of BLT's is always a great undertaking. It takes forever. Seriously, I stood at our kitchen island for two hours frying bacon tonight. But, the end result sure is yummy! The older boys earned their dinner, as I can't hold Mia while I'm frying, so she had a lot of big brother time while I was cooking. Emanuel ended up having a friend over for dinner after football practice. Well, he wasn't really over for dinner...just happened to be here for a few minutes at the time a batch of bacon came off the skillet. Good timing!


Because making BLT's for a dozen people (and it turned out to be 13, tonight) takes quite a bit of bacon, I buy it in the box from our local grocery store. The box is a a bit pricey...seventeen bucks to be exact, but still a deal for me, as by the time I purchase enough packs to feed the crowd (remembering that all except the littles will certainly eat at least two sandwiches) I'd easily spend at least that much, if not more. Plus, the box of bacon is great for sandwiches. See? It says so...right here on the box.


I fry the bacon in the electric skillet, to save time and cook more at once.


My kids (and hubby) have the habit of "picking off" pieces of bacon as I cook them. Meaning, as a fresh batch comes out and is placed on the plate beside my work station, little (and big) hands have a tendency to happen by and pop a piece into their mouths. With a family this size, you can see how quickly this can lead to disaster! If I don't intervene, we'd sometimes never make it to the sandwich part of the BLT's. I guess it'd just be B's for dinner. Anyhow, I've come up with the solution. Now, I put out a little veggie tray (or most often two) to keep little (and big) hands and mouths occupied (and away from the bacon until dinner is ready). It's healthier, and sometimes fills the kids enough so that come dinner, they don't feel the need to consume 4 1/2 BLT's. Wish I could claim the same for myself...by anyway...




It works like a charm. The littles love it...


But after a little too much of this...


We quickly break out the bowls and switch to individual portions...




Sandwiches are ready to be passed to the littles. I make them as I cook. As the first batch of bacon is done, I slap it on the bread and put it in front of a little one...


Littles get fed first...as in the minute the bacon is out of the skillet,so that they can go to bed first....and the rest of us can eat, talk, finish up homework, chores, or just chill. In peace.

But that's okay. The house is quiet, all the kids are upstairs...mostly sleeping. I'm sure someone is up to something they shouldn't be, but as long as they are quiet....

Wonder if it would be easier to cut up the bacon. You can do a whole batch at a time that way. Or would more bacon find it's way into the sandwiches that way?

Love bacon...hate the mess of cooking it on the stove. Have you ever tried cooking it in the oven on cookie sheets or those broiler pans things with the drip tray? It takes a bit of refining to get the timing right, but it does save a lot of time when your cooking a lot of it.

My hubby asked me the same question last night!!! Great minds must think alike! It does sound like a very appealing idea...the fact that it wouldn't take allll night to cook...does it taste okay this way? Would it still be crispy? I think I may have to give it a shot next time! Thanks...
